I’ve seen this title around on some channels. What do these moderators do / what are they in charge of?

From what I see, in the list of all volunteers they are “moderators” like everybody else. But looking at their names, I think I understand. These are senior people who know a lot, and are hopping in and out of episodes to give a helping hand when needed. There is the regular moderator who does all the day to day job, and then a person who is given moderator rights but is not there all the time, only when some more help is needed about something. Whenever these people pop in team discussion and do something, they are profusely thanked for their input.
