I just could not wait for my family to come to try this one. So, even though we’re all experiencing a crazy hot weather here in France, I chose to cook it today. Well, I missed a couple of ingredients, but I had most.![]()
Anyway, I never thought of using mint leaves in a hot meal, but the mixing of herbs, spices, cinnamon, and all ingredients I could find made it a really tasty food. ![]()

There are many versions that might surprise you!
One version requires smoking the rice with aromatic spices!! The hyderabadi style. I’m sure you had fun with cooking and I hope it tasted great too ![]()

To be honest, had I really understood all the different homemade components that were required (jam, pastry cream, whipped cream) I would have considered making a different cake! The pastry gods must have been on my side because I somehow managed to finish it in a little over 2.5 hours!

I’m actually good at both baking and cooking, I know it might sound like bragging but my great grandmother even cooked for Mannerheim (an important president in Finnish history) and he told that her her food was good (he came into the kitchen). I’m not saying I’m as good as my namesak but to me most traditional things aren’t all that hard. To me that cake looks easy and very tasty.
Yesterday I got me some strawberries and today I’m going to pick gooseberries and when it gets colder I will start making my own jam. This time of year is amazing, and even though chanterelles aren’t ready in my region (we have extreme heat in my region at the moment) my mother picked some during the weekend in Stockholm. For those of you who aren’t in the Nordic countries we have something called “allemannsrätt”/ “Everymans right” that makes it legal to go into any forest and pick berries and mushrooms.
I wish every country had it, everyone deserves to be out in nature.
